Giving Thanks

This year I am thankful to be alive. For a while that was a bit touch and go. I am also thankful that I have a wonderful support network of loving friends and family. I have a stack of 56 different "get well soon cards" to prove that lots of other people are also thankful that I'm alive this year. And twenty of them are coming over to my house for dinner tonight. I think that means I need to stop typing and start cooking.

My crazy husband decided not to deep fry anything this year, which is another thing to be thankful for. Instead we are baking one turkey in the oven and smoking a second in our smoker. Since we always have to cook for 40 even though we are only expecting 20 people, we're also planning to serve a side of beef. This is going to be roasted on a spit over a fire in our back yard. Yes, I truly am married to a red neck. But I'm sure tonight's dinner is going to be delicious, and my doctor does want me to eat more iron rich foods. So beef on Thanksgiving sounds like a great idea.
